This may start a bean revolution in our house (and just maybe beyond....) At 8 this morning my wood oven was still running at about 130-150C.... so, I chucked in a pot of dried cannellini beans, no soak, straight from the pack, covered in cold water, sealed tight with foil (coz I broke the pots lid 😂) and shoved 'em in. 4pm, tugged them out, and they are cooked to perfection. A week into project wood fire, and I have found my high heat mojo..... thanks I think, to confidence, and the couple of compressed sawdust logs I through in at the beginning. Was just a hunch I wanted to test as in our log burner in the front room a lot of trial and error has shown we get the very best heat output from a combination of kiln dried timber and compressed sawdust blocks (which is using a waste product of the timber industry, so thats a big bonus). And it seems my wood oven likes this too, giving me a temp of nearly 480-500C as it got going. Boof!! Moved the fire around to steady the heat on the base then started cooking pizzas at 380-400C. Two hours later its running at about 250C and I'm baking spiced rum apples. Here's the wood roast ratatouille I shoved in as it was coming up to pizza temperature. Happy days.
