Finally Instant Potted (is that a word?) a whole chicken last night. Rubbed it with thyme, rosemary, salt and pepper and cooked for 25 mins. Super juicy and moist, and feels so much healthier than buying Costco rotisserie chicken even though I love those so 😂
A huge advantage of the Instant Pot is that it doesn't heat up the whole kitchen like an oven would, and saves energy since you don't have to keep the oven on for 1-2 hours. 💙 Burger Frank have started weekend brunches from 10am and I got the chance to trial it day 1. The burgers I know are good (chorizo spices and cheddar blend were 👌🏻), but I was curious about the rest. French toast made from house made milk buns. Oven roasted nut granola and rhubarb compote. Even the fresh OJ squeezed in front of my eyes was refreshingly good. Hope you kick goals with it guys 💙 #burgerfrank

Ugh. It's stressful when you're on the road and plans get thrown for a loop. The ferry I was planning to take this Saturday was cancelled, so I'm looking into taking a different ferry from a different port, which requires me to shift around other plans I'd made and spend less time in Portland than I was counting on... I know I'll figure out how to make everything work out, and these changes open up new opportunities, but it's an unexpected, and frankly unwelcome, inconvenience. Such is the way of things. Gotta roll with it. Something I tend to be fairly adept at.
And having these fresh oysters and a heavenly cocktail to console me helps a bit. 😊
