Recipe time! Here are the ingredients for my previous post (well, most of them). I feel that every meal is an experiment, as I put together new ingredients that happen to be left over from other dishes or whatever is available in the shops. This is probably a legacy of Singapore when you never really know what will be available!
🔸mixed chopped veg: 2-3 carrots, 1/2 cauliflower, 1/2 celeriac (had to Google this as have never cooked with it before!) 🔸1 pack sugar snap peas 🔸1 pack coriander 🔸 2-3cm ginger 🔸3-4 garlic cloves (not pictured) 🔸1 lime (juice) 🔸2 onions 🔸 3 chicken thighs 🔸turmeric & salt (not pictured) 🔸250ml pack coconut cream, make sure no gums/ stablisers etc 🔸1 cup bone broth (recipe to come soon)
➡️ wash & chop veg, ginger etc I personally take the stalks off the coriander, but I don't think it's necessary, I just prefer it
➡️ layer some of the mixed veg & herbs first, then chicken thighs, then veg, thigh etc
➡️ when you add each thigh, sprinkle some salt, generous amounts of turmeric and some of the coconut cream
➡️ pour over the bone broth. My instant pot looked pretty full by this point but there was plenty of room for the veg to break down, and it wasn't liquid, so I didn't panic too much ..! It was nowhere near having issues closing the lid, for example
➡️ I set the instant pot to 13mins and on Poultry setting, which is approx what it recommends in the booklet. This produced super soft fall-off-the bone meat, which I love. However you do then need to pick out the bones and gristly bits if you want to serve it as a soup. If you prefer something more solid, then cook for a shorter time (OR cook unboned meat - but note that thigh meat is different in texture & flavour to breast meat!)
Enjoy! This has made me enough for about 5 meals, thanks to so many vegetables. It ticks many boxes from a health and healing standpoint too 😇

A morning on the catamaran with a dark pink Dutch Matisse fillet with creamy garlic cheese and a whole green onion. All this tasteless simplicity is wrapped in a fresh, gluten-free bite size pita bread of homemade preparation baked just before the cruise. All this pleasure in the open sea that was simply in excellent conditions and made everything perfect!

Pita bread recipe:
Ingredients for 12 small pitas:
3 cups boiling water
One and a half cups coconut flour
6 tablespoons of psyllium seed powder
Teaspoon of salt
3/4 cup olive oil
Heat the oven to 180 Celsius degrees.
Place the coconut flour, salt and psyllium seed powder in a food processor, processing several pulses. Add the olive oil, turn on the food processor and add the boiling water. Process for about a minute until a uniform dough ball is formed.
Divide the soft dough into 12 pieces, make from each part a small pita, place on the baking pan covered with baking paper.
Bake for 40 minutes until the pita bread is puffed and brown in the color of whole wheat pitas.

We ventured out to let the kids get some exercise on the indoor playground- they love it because I'm not running up to them every ten minutes making them hydrate, I love it because it's boxed in and there is only one exit I have to watch. 🙌🏼
Tonight I am getting my Aunt Linda's loom! If you've been following me for a while, you might know that my degree is in textile and fiber arts. I am SO EXCITED to start weaving again. It's incredibly therapeutic, and a great way to release some creative energy.

I miss casseroles a lot so I decided to try and make my own #sibofriendly version! This is ground turkey, spinach, peas, and celery root "rice."
1 celery root, cubed, steamed for 12 min, and placed in a food processor to "rice"
1 lb. ground turkey, browned
1 package of fresh spinach, sautéed
1/2 cup of frozen peas
Mix with 2 whisked eggs, 1 cup homemade coconut milk, 1T garlic infused olive oil, and thyme, basil, chives, paprika, salt, and pepper to taste.
Cook at 350F for 30-40 minutes. .
