Delish stuffed zucchini for dinner
Ultimate summer vegetable.
1-2 medium zucchinis
6 garlic minced
I can of diced tomatoes or 1 cup & 1/2 diced tomatoes
2 tsp tomato paste
1/4 a cup quinoa
1 cup broth
Salt n pepper
4 Tsp olive oil
sauté 1/2 of the garlic in oil till fragrant then add the diced tomatoes, add salt n pepper n a dash of sugar(optional). Let it boil then simmer for 20 minutes. Then add basil & the 2 tsp tomato paste. if the sauce is very thick add some water to keep it like the pasta sauce.
Cut the zucchini in half lengthwise. Scoop out the pulp. You may want to salt the scooped zucchinis. Cook the onions, garlic in olive oil and the pulp add quinoa. Add 1/2 cup of broth salt n pepper. Let it cook till the quinoa is done. Arrange the zucchini in a baking dish. Use the quinoa mix to fill the zucchini add the tomato sauce on top. Add 1/4 of the broth to the baking dish around the zucchinis. Bake covered for 35 minutes. Garnish with basil 🌿
Quick easy dinner made with mostly leftovers! I cut up some pepper and onion from the fridge. Then added some minced garlic. I let that sauté up and added diced tomatoes, pepper, chili powder, and some tomato paste. While it was cooking up I added in some of the chicken breast I grilled up there the other day! I put it over the spaghetti squash I made from the other day too! What's your favorite leftover concoction?

Do you realize that about 90% of the cans of diced/puréed/etc tomatoes have added sugar. I stood in this aisle probably 5minutes looking at the labels. I GET it...sugar/acidity/etc BUT I PREFER to control my sugar intake and if need be will add how much and what I prefer to my food. #addedsugarnothanks
